Kushiage Su is a dedicated gluten-free kitchen and a tiny, reservation-only omakase spot in Tokyo’s Chūō district, where chef Su works alone at the counter in front of just a handful of seats. The room is intimate and beautifully designed, and diners watch every course being prepared and presented right before them. The entrance is famously hidden, though the chef sends pictures ahead of time to help guests find it, and conversation flows through a translation app.
